I'm torn on this one between chins or deadlifts.

Dead lifts for me all day long!
I can kinda understand why you would say chins Brawn but I think its pretty standard that deadlifts are the don of all back movements.

Thicker back or wider back
If you want a thicker back giving u that chest to back thickness then deadlift..and deadlift HEAVY . Lock your back nicely so you can get that *roll* out of it.
For a wider back its pull ups,pull downs and chin ups. Nice and heavy then drop set it if u can.
Seated and single arm rows wont hurt either.
